It is starting to feel like Fall

The mornings are getting a bit chiller, the wind more brisk, the blankets feel cozier and cozier, and the morning sun keeps rising later and later….

More than likely, since it’s Iowa… there will be one more heat blast… but let this weekend serve as a reminder, get your lawn guy on the calendar for aeration and an overseed! We just reached out to get on the schedule, so figured we’d give a PSA.

Mini Meatloaf Muffins

ANOTHER READER SUBMITTED RECIPE. LFG!

Take a meatloaf recipe and miniaturize it! Make it fun-sized for tiny hands and craveable bites for the big kids (including the adults!). When it is all said and done, this should take ~45 mins (tops) from start to finish, prepping, cooking, and cleaning. Perfect for those busy school night evenings.

Ingredients

  • 1.5 lbs. ground beef (or turkey)

  • 2/3 cup panko breadcrumbs

  • 1 egg, beaten

  • 1 Tbsp. barbecue sauce

  • 1 Tbsp. mustard

  • ½ tsp. garlic powder

  • ½ tsp. chili powder

  • ½ tsp. each, salt & pepper (to taste)

  • 1/3 cup brown sugar

  • ½ cup ketchup

  • 2 tsp. Dijon mustard

  • ¼ tsp. ground nutmeg

1) Preheat oven to 350 degrees.

2) Mix the sauce. In a bowl, combine brown sugar, ketchup, Dijon mustard, and nutmeg. Set aside.

3) Mix the meatloaf. In a large bowl, combine ground beef, breadcrumbs, onion, BBQ sauce, mustard, chili powder, garlic powder, salt, pepper and egg.

4) Press into muffin tin. Divide the mixture evenly among the 12 cups, pressing meat down to fill the cup.

5) Bake for 15 minutes. Remove from oven and use a paper towel to soak up any grease on the meatloaf. Generously spoon meatloaf sauce over each mini meat loaf.

6) Return to oven for an additional 10-15 minutes or until the meat is cooked through.

7) Serve and enjoy!

Easy to make and one of our kids got 3 helpings!
