Our dog really doesn’t want us to work on this newsletter.

She loves pawing at the keyboard, groaning for attention, and just generally being absurdly cute and obnoxious.

This is what we have to deal with! Week in and week out…. she thinks she is helping.

Have fun this week.

Pesto Zucchini & Corn Orzo Casserole

This ain’t your grandma’s tater tot casserole! It’s Fall and we are entering casserole season, so it is perfect time to feature the Midwest’s favorite type of food… a casserole!

Full disclosure though, we have not yet tried this recipe… but it looked too good to not share. We will definitely be cooking this up later this week.

We got this from AllRecipes and this should make up to 8 servings.

Ingredients

  • 4 small zucchini (or 2 large), sliced ½ inch thick moons

  • 2 cups dried orzo

  • 2.5 cups chicken broth

  • 4 cloves garlic, minced

  • 4 Tbsp. pesto

  • 2 cups frozen corn

  • 1 cup shredded mozzarella cheese

  • ½ cup freshly grated parmesan cheese

  • Sweet drop peppers (optional)

Step 1: Toss zucchini with a little salt and let stand for 10 to 15 minutes. Pat dry.

Step 2: Preheat the oven to 400 degrees. Lightly grease a 3-quart 9x13 or similarly sized baking dish.

Step 3: Add orzo, broth, corn, garlic, olive oil and half the pesto to the baking dish; stir well to distribute orzo evenly.

Step 4: Place zucchini on top in a single layer; do not stir zucchini in. Drizzle lightly with olive oil; season with pepper. Cover tightly with foil.

Step 5: Bake in the preheated oven for 20 minutes. Remove foil. Gently stir the orzo underneath, and swirl in remaining pesto. Sprinkle mozzarella and Parmesan on top.

Step 6: Bake uncovered until the top is lightly golden and orzo is tender, 10 to 15 minutes more. Let the dish rest for 5 to 10 minutes before serving. If desired, garnish with sweety drop peppers.

Step 7: Enjoy!

That’s it for this week.

Our dog only set us back a little bit… but we persevered! Isn’t she just adorable?

Good luck this week and check out some trunk-or-treats that are going on! Too many to mention, we didn’t want to accidentally miss some, hence why we only highlighted a couple this week!
