It’s only Hump Day.

But man, has it been a week already for our household and tears have been shed. 😢

Sunday started off great, with some bright purple nail polish being rubbed into the living room carpet (it’s fine). Monday night gymnastics then leading to the inevitable bedtime battle (whatever, trust me, it’s fine). Then a tantrum on the way to school the next day because a shoe fell off (Really child?). A late night at work (there goes the meal planning…). Waking up 4 times last night (or was that Sunday night the baby didn’t sleep? Idk. It was rough.)

Dogs on Skis (what a great band name) will be playing live from 6-9 pm down at Cedar Ridge Winery & Distillery. The band covers classic and modern rock hits. The weather should be perfect for an event like this.

This most certainly can be a family thing, but… remember, wine and whiskey, right??? To go with your cocktail or mocktail of choice, we highly recommend the sweet ‘n spicy wood-fired pizza and the burnt ends queso ( 🤤 ). If spicy is not your thing, you can’t go wrong with any other pizza on the menu. Drinking your dinner is also acceptable but just make sure you have a sober ride back home.

Make sure you pack a chair as seating can be hard to come by at some of the music nights!

Time to shine, be the home chef that your kids think you are

40 Clove Garlic Chicken

Yes, 40! 40 cloves of garlic. In fact, if you want to use 41, or 42 or 43… or 57… we won’t tell… we love garlic too. We dug into the first cookbook we got years ago as a wedding gift for this week’s featured recipe. We’ve yet to try this recipe until this week, and it was a hit (at least with most of us, the middle child wanted oatmeal).

CRFW Pro Tip: This meal will take upwards to an hour to prepare and cook, so plan accordingly.

Ingredients:

  • 4 chicken thighs or breasts (about a pound, we prefer breasts)

  • Salt and pepper (to season)

  • Mixed Herb (to season, we like Ms. Dash)

  • 3 shallots (chopped, or use a red onion)

  • 40 cloves of garlic (!!)

    • About 4-5 heads, maybe more.

  • ½ cup dry vermouth or white wine

  • Fresh Parsley

  • 1 tsp. tarragon

  • ¾ chicken stock

  1. Preheat the oven to 350°F.

  2. Season the chicken with the salt, pepper, and mixed herbs. Set aside for now.

  3. Heat oil in a large cast iron and sear the chicken 10-15 mins on each side until golden brown.

    1. No cast iron? No problem. You can also use a different oven safe pan or just use normal pan and transfer everything to a sheet pan when it comes time to put the chicken in the oven.

  4. Remove the chicken and set aside to rest. Then, add shallots to the hot pan and cook over low-medium heat for 5 mins.

  5. Throw the 40 cloves of garlic into the pan and cook for 2 mins.

  6. Deglaze the pan with the vermouth/white wine and gently reduce down to cook out the alcohol

    1. CRFW Pro Tip 👩‍🍳: Deglazing the pan is how you create an amazing sauce.

  7. Add the chicken, fresh parsley, and tarragon into the pan along with the chicken stock, then bake in the oven for 20-25 mins. (or until chicken is thoroughly cooked).

  8. ENJOY.

For a side, we recommend some roasted broccoli or brussel sprouts along with some nice bread such as a sourdough loaf or a baguette.
