The event calendar may be a little light this week. No one in particular to blame, but life herself.

  • Another 3-year-old birthday party (but this time for a cousin)

  • All the above hosted at, you guessed it, our house…

Also, congrats to all the kids who made it to the end of the year and all those new teen graduates moving to the next stage in their lives!

Night Out @ Brucemore

Call the babysitter, dust off something that doesn’t have a mystery stain on it, and forget about doing bedtime!

Brucemore is hosting their annual summer cocktail party, and it is strictly 21+ (meaning the only whining you'll hear is if someone spills their drink). Imagine this: warm June air, the Formal Garden in full bloom, and live music by Alicia Monée, Kelsey Madsen, and Lucy Conroy backed by the Servants' Quarters Band. No Danny Go!, no background noise of a tablet blasting unboxing videos… just pure, glorious… bliss.

Tickets are $75 per person (plus a $4 processing fee for online or phone orders), which might sound like a splurge, but hold on—food and drinks are included. Read that again. You don’t have to cook, you don't have to cut anyone's chicken into microscopic pieces, and the drinks are already taken care of.

Ok, just give this a chance!

Pad Thai Nachos

NaRa or Siamville? The debate that pits friends against friends, neighbors against neighbors and rips families apart… But, what about neither? What if a new challenger stepped up and joined the fray? Today is the day… YOU will enter the arena and attempt to take the crown 👑 for the best local Thai food.

Plus, its nachos? just throw everything in a pan and bake it for a little bit. Easy stuff.

Ingredients

  • Tortilla Chips (or a package of wonton wrappers to make more authentic chips)

  • 2-3 cups cooked, shredded chicken (we recommend leftover rotisserie chicken!)

  • 3 Tbsp creamy peanut butter

  • 3 Tbsp brown sugar

  • 3 Tbsp soy sauce

  • 2 Tbsp lime juice

  • Diced green onion

  • 1 cup shredded carrots

  • Cilantro

  • Optional items include:

    • 2 large eggs, scrambled

    • Diced bell pepper or onion

    • Lime Wedges

    • Diced/chopped peanuts

    • Chili flakes/chili sauce

  1. Preheat oven to 375 degrees

    1. If you are making your own wonton chips, cut and square wonton wrappers to create triangles, lay them on baking sheet with some lightly sprayed/brushed vegetable oil and then cook ~6 mins (or until crunchy). They will cook fast!

  2. Make the Sauce

    1. In a small microwave-safe bowl, combine the peanut butter, brown sugar, soy sauce, and lime juice. Microwave for 15–20 seconds just to soften the peanut butter, then whisk until completely smooth.

      1. Stir in the warm water one tablespoon as needed time until the sauce is smooth.

  3. Assemble & Bake the nachos

    1. I hope we don’t have to tell you how to assemble nachos… but if we do…Evenly scatter the shredded chicken, and shredded carrots, green onion, cilantro, etc. over the top of the chips.

    2. Bake for 4-5 mins, until warm.

  4. Top with optional chopped peanuts, squeeze of lime juice and add some heat to your plate with chili flakes or sauce.

  5. ENJOY!
